PEP是一种水溶性的载体蛋白，可以在不同的膜结合细胞器之间转移磷脂。转移的过程是：PEP首先与磷脂分子结合，形成水溶性的复合物进入细胞质基质中，通过自由扩散，直至遇上其它的膜时，PEP将磷脂释放出来，并插在膜上，结果使磷脂从磷脂含量高的膜上转移到缺少磷脂的膜上，即从磷脂合成的部位内质网转向线粒体或过氧化物酶体上。
