微生物分解果胶类物质是麻类植物脱胶处理的原理。麻类植物纤维的化学成分是纤维素，存在于茎秆的韧皮部，纤维素与果胶类物质结合在一起充实于茎秆的木质部及韧皮部与皮层之间。纤维植物脱胶就是利用果胶分解微生物有分解果胶类物质的能力而没有分解纤维素的能力，从而将果胶类物质分解掉，将纤维完好地脱离出来。民间麻类脱胶采用水浸和露浸两种方法，前者是利用厌氧性微生物分解果胶，后者是利用好氧性微生物分解果胶。
